GRILLED PORK CHOPS WITH MANGO AND HABANERO SAUCE
Bone in Pork Chop with sweet and spicy sauce or salsa.
INGREDIENTS
- 4 thick bone in Pork Chops about 250g each
SPICY RUB
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon freshly ground black pepper
- ½ teaspoon chilli powder
- 1 teaspoon smoked paprika
- 1 teaspoon brown sugar
- 1 teaspoon sea salt
- ½ teaspoon cayenne pepper
MANGO & HABANERO SAUCE
- 1 ripe mango
- ½ cup ripe cherry tomatoes , diced
- 2 tablespoons Frank's RedHot Chargrilled Habanero sauce
- ½ small red onion, finely diced
- Small bunch fresh coriander, roughly chopped
- Juice of ½ lime
- Olive oil
- Sea salt
- Freshly ground black pepper
METHOD
- Mix together all the ingredients for spicy rub in a shallow dish, dry the pork chops and sprinkle over the rub on all sides.
- Puree all the ingredients for the mango and habanero sauce together until smooth in a blender.
- Heat the BBQ or grill in the oven and cook the pork about 3 minutes each side depending on the thickness of the chop. The meat should be crispy with a spicy “bark” on all sides.
- Serve the Pork chop on a puddle of mango and habanero sauce.
- You can also make a fresh mango and habanero salsa. Mix together all the ingredients for the sauce in a bowl and serve fresh and chunky.
- If mangoes are too expensive in the winter, substitute a cup of ripe pineapple chopped or pureed instead.
